How to make Soto Banjar

Soto Banjar is a traditional soup dish from Banjarmasin, a city in South Kalimantan, Indonesia. Here is a recipe for making Soto Banjar:


Ingredients:


  • 500 grams of beef, cut into small cubes
  • 1 liter of water
  • 2 stalks of lemongrass, bruised
  • 3 kaffir lime leaves
  • 2 bay leaves
  • 2 cm of galangal, bruised
  • 2 cm of ginger, bruised
  • 1 tablespoon of salt
  • 1 tablespoon of sugar
  • 2 tablespoons of vegetable oil
  • 2 cloves of garlic, chopped
  • 1/2 teaspoon of coriander powder
  • 1/2 teaspoon of cumin powder
  • 1/2 teaspoon of white pepper powder
  • 3 tablespoons of sweet soy sauce (kecap manis)
  • 3 tablespoons of lime juice
  • 1/2 teaspoon of shrimp paste (terasi)
  • 2 hard-boiled eggs, halved
  • 1 stalk of green onion, thinly sliced
  • 100 grams of bean sprouts
  • Fried shallots, for garnish

Instructions:


  1. In a large pot, boil the beef cubes in water for about 1-2 hours until tender. Remove the beef and set aside the broth.
  2. In a pan, heat vegetable oil over medium heat. Sauté garlic until fragrant.
  3. Add coriander powder, cumin powder, and white pepper powder. Stir-fry until fragrant.
  4. Add the sautéed spices, lemongrass, kaffir lime leaves, bay leaves, galangal, ginger, salt, and sugar to the beef broth. Bring to a boil.
  5. Add sweet soy sauce, lime juice, and shrimp paste. Stir well and let it boil for another 5 minutes.
  6. To serve, place the bean sprouts, hard-boiled egg, and green onion in a bowl. Add the beef and pour the hot broth over the top.
  7. Garnish with fried shallots and serve hot.


Soto Banjar is typically served with steamed rice or ketupat (compressed rice cake). Enjoy!
