Ingredients:
- 2 cups cooked white rice
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 2 eggs, beaten
- 1/2 cup cooked shrimp, peeled and deveined
- 1/2 cup frozen peas and carrots, thawed
- 2 tbsp sweet soy sauce
- 1 tbsp oyster sauce
- Salt and pepper, to taste
- Sliced cucumber and tomato, for garnish
- Fried shallots, for topping
Instructions:
Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic and onion, and sauté until fragrant and softened.
Add the beaten eggs and scramble until fully cooked. Add the cooked shrimp, peas and carrots, and continue stir-frying until everything is evenly mixed.
Add the cooked rice to the wok and stir-fry until it is heated through and evenly mixed with the other ingredients.
Add the sweet soy sauce and oyster sauce, and season with salt and pepper to taste. Stir-fry for another minute or two to ensure that the flavors are well incorporated.
Serve the nasi goreng hot, topped with sliced cucumber and tomato, and fried shallots for added crunch and flavor.
